History

Ramen is a traditional Japanese soup that was introduced in the 1660’s. It is also known as the Japanese adaptation of the Chinese wheat noodles and cooking methods. It is a variety of vegetables, proteins and cooked noodles are simmered in a flavorful meat or chicken broth. 

Ingredients

  • Beef Bones –  500 Gram
  • Vinegar – 1 tablespoon
  • Green onion stalks -3
  • 2 medium carrots
  • A clove of crushed garlic
  • Salt and pepper to season
  • Soy Sauce – 1 tablespoon
  • Whole pepper – 1 teaspoon
  • Water – 2 litters
  • Mushrooms – 5
  • Boiled egg – 1
  • Dark soy sauce to dip the egg
  • Chicken skin (optional)
  • Meat or chicken 200 Grams
  • Assorted bell pepper sticks (julienne) 50 grams
  • Carrot julienne – 20 grams
  • Green vegetables or  baby bok-choy – 100 grams

Recipe

Make a bone broth by simmering beef bones with carrots, green onion stalks, garlic, salt and pepper for about 6-12 hours. Add few mushrooms in the simmering liquid and cook for 2 minutes. Marinate a boiled egg in dark soy sauce for 4 hours. Cook meat by boiling or pan searing. Crisp some chicken skin on a hot skillet (optional). Blanch the leafy vegetable and cool them in ice water. Cut bell peppers and carrots in julienne size. Boil the noodles and rinse it in cold water. Finally place all the above solid   ingredients in a wide deep bowl and top up with the bone broth. Season the soup with lime and soy sauce if desired. Enjoy hot!
